Staying Soft in Fall: Baked Blackberry Brie

Celebrate fall with this charming Blackberry Baked Brie! This easy appetizer features creamy brie topped with sweet blackberry preserves, fresh blackberries, and crunchy pecans in a buttery graham cracker crust. A drizzle of honey and a hint of rosemary add a perfect autumnal touch. With just 15 minutes of prep and a quick bake, it’s a delightful treat for your seasonal gatherings, best served warm with crispy crostini!

For 6-8 Servings

Cook Time: 25 minutes 

Ingredients
  • 1 large (12 to 16 oz) round brie
  • ⅓ cup of blackberry preserves or black currant jam (I use Bonne Maman Blackcurrant Jelly)
  • ¼ cup of blackberries
  • ¼ cup chopped pecans (Option: Trader Joe's Pecan Pralines)
  • 1 teaspoon finely chopped fresh rosemary
  • 1 teaspoon of honey
  • 1  9-10 inch Keebler Ready Graham Pie Crust

    Instructions

    1. Preheat the oven to 350 degrees
    2. Slice the top rind off of your brie and lattice cut the brie to create space for the blackberries
    3. Place the brie in your Keebler Ready Graham Pie Crust (or 10 inch pyrex)
    4. Place a few blackberries within the lattice cuts or mini holes inside the brie pushing them down inside the brie
    5. Add a light layer of blackberry or blackcurrant jam on top of the brie with popped in blackberries 
    6. Trickle chopped pecans on top of the layer of blackberry or blackcurrant jam
    7. Add a light zig zag drizzle of honey on top of the chopped pecan layer
    8. Option here to top the brie with very light sprinkles of fresh rosemary or dried rosemary
    9. Fill in the rest of the space of the pie crust with additional blackberries and pecans
    10. Bake at 350 degrees for 15-20 minutes
    11. Enjoy with Crostini snack breads or optional bread recipe below

    For Bread:

  • Preheat oven to 350 degrees
  • Add fresh or dried rosemary to a small bowl of olive oil
  • Add any additional seasonings of choice (ex. Thyme, parsley, etc.)
  • Cut 1 baguette loaf into slices
  • Dip the cut slices of the baguette into the oil mixture
  • Add the slices of baguette with oil and seasoning topping onto a baking sheet
  • Bake in over for 5-10 minutes (until lightly crisp or lightly brown)
  • Enjoy with Blackberry Baked Brie
